Homemade Creamy Balsamic Vinaigrette Dressing

I’ve recently been blogging a lot more about food, and how we use our diet to enhance our healthy lifestyle choices. Changing your diet and eliminating your favorite foods can be really overwhelming at first. When I first started changing my diet, I was really intimidated and scared to start. We started slow, and gradually made changes. Now, this lifestyle is really natural, and I can’t imagine eating any other way!

One of the things I was most intimidated to try was homemade sauces and dressings. They seemed so complicated and easy to mess up, so I was really surprised to realize they can be quite easy!

I mentioned earlier this week that I make a lot of my own dressings, and this creamy balsamic is my current favorite! Not only do I use it to top my salad, but it’s also amazing on chicken or fish!

I do feel like it’s important to warn you before I share this recipe that I don’t really measure when I cook. I’m going to do my best to give you some rough measurements in this post, but please know that it’s pretty hard to mess this up.  You can taste it as you go and adjust the ingredients to your liking. If you have extra, it stores well in the fridge, too!

So, let’s get to it! To make this dressing, you’ll need:

  • 1-2 tbs of homemade mayo (this recipe is really, really easy and good!)
  • 1/4-1/2 cup of balsamic vinegar
  • salt, pepper, onion, garlic, and oregano seasonings
  • an imersion blender (you can use a whisk, but the blender helps make it creamy)

 

 

Directions:

To make this dressing, I just mix my mayonaise, vinegar, and seasonings with my immersion blender. As I mentioned above, I don’t really measure mine, but you don’t need much mayo at all. It’s really just there to make the vinegar creamy and take away a little of the bite. You can experiment a little here, so you get the consistency you like. I recommend starting with 1 tbs and slowly adding your vinegar until you reach the consistency and flavor you like!

Once your dressing is made up, store it in a mason jar in the fridge for 3-4 days.

*A note on homemade mayo:

If you have never tried making your own, I highly recommend it. It’s much tastier than store bought, and takes less time than driving to the store for a jar. Even people that don’t like mayo find the homemade kind good!

So, don’t knock it ’till you try it, okay? But, If you’re really against making your own mayonaise, or simply don’t have time, I will say that this recipe also works well by simply replacing the mayo with extra light olive oil. It won’t be creamy and rich, because that comes from the mayo, but it’s still got a great flavor.

This recipe is a great choice for families watching the ingredients in their food. It’s free from preservatives, dairy, grains, and many other ingredients that we like to avoid. It’s also a richer option for those that want a healthy salad, but don’t want to resort to a spritz of oil on their lettuce.  There’s no need to sacrifice flavor when you choose to eat healthy, and this dressing proves it!
